Well, it really doesn't have to do so much with the swimming itself. Some people can get cramping after eating if they do any kind of physical activity. It's just that if you suffer cramping while running, for instance, you can just sit down and rest until the feeling passes. If you get a cramp while swimming, for instance, and you are 12 feet of water, you might be in a little trouble.
It's really just about letting your food digest some before you do anything physical and potentially dangerous.

Because the "Wait One Hour After Eating to Go Swimming" gods will come and drown you if you don't obey them!

So the smell of your food wears off so you don't attract sharks. Seriously, it is believed that you will get cramps and won't be able to swim because your stomach is busy digesting your food. It has never happened to me though.

It could have something to do with a lot of the blood in the human body going to the stomach to digest so that there is less in the limbs. That could cause a cramp in the leg. Seriously.

Because if you go swimming right after eating you could develop severe cramps and drown.

Simple, really.
You see, all the circulation of oxygenated blood within the body is dedicated to maintaining the lower brain functions; ie. breathing, digesting, etc.
So... we all know what occurs after ingesting a whole wheat, tofu veggie wrap with spiced lentils, brown rice and baby spinach leaves...?... ....We ...really...want ......another one, ...along with a tall bottle of fresh carrot/beet juice....right?? And for dessert, a big, juicy slice of cool, ripe honeydew melon.

Right...
Now, that I'm back from lunch...where was I?...
Oh...oh yes!...
Waiting an hour before swimming...
Well, you don't want a cramp, do you?

It's Saturday, dear...I'm going to the pool...Cheerio!

That is a myth. Parents didn't want their kids cramping up and drowning but really that does not happen. They just say it to give them a break from pool duty.
