"Dear Sirs" is perfectly correct when writing to an organization (such as a committee) which you know has several members each needing to read your letter. It would not be appropriate for writing to a newspaper, since letters are assumed to be addressed either to the editor, or the letters editor.
Dictionaries do not include plural forms unless they do not follow the standard form, which is to add an "s" on the end (so "sheep" will probably have an entry for its plural form, which is "sheep"). "Sirs" fits the standard form.

I don't think you can use Sirs WHILE WRITING THE LETTER if you are writing to many of them obviously only one will read it...So you shouldn't use sirs in letters while speaking its OK..

But, remeber, our Mahatma Ghandhi Ji's word.....never call a Britisher as "sir"
