Grass is a composite of many chemicals which are broken down in the stomachs and intestines of the cow. What makes grass green is chlorophyl, a chemical in most plants.
The intestinal tract absorbs different chemicals, like water, sugar, salt, fats and blood transports them to the places in the body where they are needed.
The mammary glands produce lactose, calcium and other chemicals which together form a mixture we call milk, which happens to be white.

contradictory to popular belief, the milk is not a result of all the grass they chew. its the result of all the bread they eat.
