In short. Hormones do just about everything. What follows is by no means an extensive list. It merely serves to illustrate a point.
Brain: releases Oxytocin, Pitocin, GnRH, Neuropeptide Y, Dopamine, Serotonin (mostly as a neurotransmitter)
Pituitary: Prolactin, Follicle Stimulating Hormone, Leutinizing Hormone, Thyroid Stimulating Hormone, Growth Hormone, Follistatin (mainly as a paracrine factor).
Ovary: Estrogen, Ihibin A, Inhibin B, Activins, Testosterone, Androsteindione, Progesterone, DHEA
Adrenals: Cortisol, Aldosterone, Epinephrine, Norepinephrine, DHEAS, Testosterone, DHEA, Anti mullerian hormone.
Testes: Testosterone, AMH, inhibin
Intestines, Parathyroid, and even Fat Cells release hormones. If you get pregnant, the placenta also releases hormones. Some cancers release hormones.
They basically regulate most of your bodily functions.
The question you ask is kind of like asking: How does the body work?
There are entire textbooks on each of these systems. Books that try to cover all the hormones generally just gloss over the finer details.

Some you may have heard of are estrogen, progesterone, testosterone, human growth hormone, and insulin. There's a further list on wikipedia.
