It really depends on what you mean by "best", but if it's based on location and service then I have a couple of suggestions from having lived in Charlotte and stayed in both:
Downtown/"Uptown": Weston
It's new, hip, great bar, and in the middle of everything

South: Ballantyne Resort
I've been here a number of times - original art, golf next door, great restaurant, and terrific service

These two are by far the best, and overall suggest the Westin due to location.

Hello lumpy2
You said best Hotels. Your choice. Downtown or near the mall.
Marriott Hotels Resorts Suites
100 W Trade St
Charlotte, NC.
Is downtown. Near fun activities, many restaurants, clubs, carriage rides, museums, ect.!
Hyatt Charlotte at Southpark
5501 Carnegie
Charlotte, NC.
Hordes of restaurants within 2 miles of the hotel. The hotel provides a free shuttle to the mall, which is near by.
Have fun.

If you are going to see a Panther's game it is most certainly the Westin. Walking distance to the stadium and a great hotel. Other than that, can't help.
