It can mean one of two things.

Firstly, it can mean that you are "on call" or work only a few days a week. If you are on call, it means that they can call you in the morning and say to come in that day. Or, you can have a roster that is certain shifts.

Casual can also mean that it is a seasonal job (like extra staff during the lead up to a holiday, or fruit picking).

It means that after you work for a few days they might up and tell you that they don't need you anymore.
