i think 9 or 10 at 1 table

The standard is between 9-10 players per table, but i have seen some table with 11 people as well. If you have more then 10 people it just becomes very uncomfortable for everyone.

because cards can only be divided so many ways. 5 players for 7 card poker 7 for 5 card poker 2 for war 5 for old maid

Generally 10 is the most I've seen it. I guess you could have more if you really wanted to.
