Hand luggage is what you are allowed to carry on to the plane by yourself. Hold baggage are the bags that you check in and they go into the hold of the plane. Suitecases etc.

You carry the hand baggage with you for the entire trip - around the airport and on the plane, it's normally about 5kg orwith budget airlines 10kg. Hold baggage is checked in and goes under the plane - you collect it off a turn table thing when you get off the plane

Hand baggage is carry-on luggage. It has to comply to a certain size and limited weight. You are also restricted in terms of things that can go into your hand-baggage (ie. sharp implements). Hold baggage goes into the hold of the plane.
