Never thought of it until now. I think the easiest way would be to get one of those used cable spools (from electric or phone company), take the top off and place it over a 55-gal drum.
This would provide a round wooden tabletop with a hole in the middle. You could drop the crawfish shells down the hole and into the barrel.

Let them have the space. Set it aside as a zoo. Charge tourists to visit. Like mentioned, I think it not a good place for a lawn if crawfish are burrowing in. Too wet. Not a problem I've ever consider. How strange. (Oh yeah, and et 'em.)

Well I've never built one, but have built various tables, cabinets, and other furniture.
I doubt I'd top off a 55 gal drum for that purpose however. I might, if it was one of the Plastic type, using yard trash bags as liners.
In any case, measure the diameter of the drum,,,trash can,,,whatever, and cut your wood,,,Preferably exterior ply or marine ply, to overlap enough to allow safety and stability. It can be square or round, and makes little difference. Then cut a hole in the center, probably using a paddle bit in a drill, and a sabre saw.
I suspect if I was "making" one, I'd probably make it square and tile it. That might allow easier clean up, and a better work surface.
If your budget allows, you might also look for teflon sheet stock, often in white, similar to cutting boards found in small sizes for kitchen counter top food prep. Perform the same tasks to create the end result as you would with wood.
