different parts of the carrot taste different
the outside is more bitter while the center is usually sweeter
not sure why, but i've always wondered myself

The outer part of the carrot and the top (where the greens were) taste bitter due to the soil. the soil does play a part in the overall taste, after all, that is where the carrot grows and it does soak up nutrients from the soil.

the parts taste different, and not because of the soil. the difference in taste has to do with the specialization of plant cells. the area which stores the energy produced by the cells is naturally going to taste sweeter than the more densely fiberous cambium-like layer, which will serve less to produce/store energy and more to be a sort of sheild against damage/bugs from outside the plant.

actually, only the point of the carrot tastes like carrot. as you eat the rest, it begins to taste like Pringles Pizzalicious. the green part that everyone tells you not to eat? that's because they know that it tastes like fresh-ground coffee. they buy it when the supermarket guys cut off the tops in the interest of "freshness". yeah, that's that.
btw, i hope you know i'm kidding...i don't want you to be mad at me when your carrot just tastes like carrot.

the transparent bit tastes weird :( but the bright orange is delicious . Carrot is a brilliant food.
