when downloading a pic video etc on a Mac how do you choose where you what that file to go?

It's set in the preferences.

If you're using Safari:
navigate Safari > Preferences in the menu bar
under the General tab, select your preferred location next to "Save Downloaded files to:"

some download ask, some just put the file into the 'download' folder, for me it's my desktop!

Safari has a couple different download options, so does mail.app!

they need to clean this up!

Usually iPhoto takes care of that.
