We tie bunches of cut stems together and hang them in the shed for several months and then remove the lavender seeds and sew them into small muslin bags to hang in the wardrobe or place in a sock drawer (not that my socks need it).
Beautiful scent and it gets stronger once its been dried.
Pruning the lavender bush like this also seems to encourage better growth the following year.

You've got good info on drying and potpourri, so how about something completely different? Lavender makes a nice, Victorian addition to pound cake (Don't go overboard. A Tablespoon or two of dried flowers is plenty.). It makes a fair tea when infused with a "body" herb like lemon verbena or mint. I've used dried lavender flowers as a pretty accent in homemade paper for greeting cards. It also works as an addition in handmade soaps. If you're not a "from scratch" soap maker, melted glycerin soap mixed with a bit of dried lavender and poured into molds is really easy to do and makes nice gifts. Lavender flowers on the outside of candles is also cool. Make or purchase candles, warm them very slightly to soften the outside and roll the cooling candle in a tray of lavender.

Cut stems as long as possible, bunch and tie them off with a long string, hang bunch in a dry airy place THEN crush them and use for potpourri. Some people hang the bunches in a dry paper bag to collect the seeds.

You could crush it and glue it to a foam wreath, wrap a ribbon around it and add a bow, would be very pretty and fragrant hung on the wall this way or to give as a gift.
Also if you have enough of it bunch it and sell it at a farmer's market, people love dried flowers.

You can crumble it up and put it ina decorative bowl and place in the lounge to give a pleasant aroma. Or place some inside a small material pouch and place in the wardrobe, moths hate it and it makes the clothes smell great.Also place inside your pillow , it will help you sleep at night and relax your mind

I LOVE lavendar, so I display it (wrap it, hang from the ceiling, put in a vase, etc.) Also, make sachet's out of it and put in dresser drawers. Also, pot pourri.
