Normally I take a fruit salad with me or fresh salad for those who are very conscious of what they eat and most of the time, what I bring is the first one to get consumed. You can bring fresh fruits (still in their skin) or if you want - you can bring seafood or a pasta dish made from tuna or shrimp & crab. Healthier foods get finished fast.

I take a middle of the road healthy, simple vegetable side dish. Nobody takes vegetables. it is either dessert or chips and dip, or meatballs.
Trying to show off with something overly complicated builds a certain amount of resentment in some people and bringing chips all the time is not fair if you are enjoying everyone's hard work.

Usually leftovers, but it could be anything from Homemade chinese to shrimp cocktail. (Yeah, I'm a bit of a show off.) Grilled BBQ pork chops...beef kabobs...
