Such as Cosmo, GQ, Esquire, Glamour, Men's Health, Vogue, Details, Vanity Fair, Jane, etc. Are they paid by word, if so what is the amount per word. Also is there a way to get in touch with these writers? Do they have a database of writers available anywhere?

Most of the popular magazines like the ones you mention do pay by the word. Magazines with lower circulations often have different methods of paying, such as a fixed amount.

You can probably get in touch with the writer through the magazine that you read them in. I would suggest contacting the magazine and seeing what their policy is about passing along communications to their authors.
