I love the theme to Meet Joe Black. Another would be the theme to Last of the Mohicans and the theme to St Elmo's Fire. Other noteworthy soundtracks:
* Empire Records
* Romeo & Juliet
* The Breakfast Club

Some of my favorites:
"One From the Heart" Tom Waits & Crystal Gayle
"Taxi Driver" moody last Bernard Hermann score.
"September Songs" music of Kurt Weill preformed in various genres. Saw this on PBS.
"The Harder They Come" this film brought reggae to the masses in the 70's.

Dazed and Confused has a killer soundtrack if you like 70s rock, and Oh Brother Where Art Thou is good if you like bluegrass (It won an Academy award The soundtrack, not the movie). Also, if you like early 90s rock, Last Action Hero has a killer soundtrack (but a stupid movie)!
