I believe they are referring to stock in the company. If not a lot of stock is traded, ie, bought and sold, the value will be low. If there is a large volume changing hands the price will go up.

Turnover is the rate at which items is replaced.

Turnover of employees means the number of employees which leave the company in a given period. Also see Atrition.

Turnover of inventory means the time it takes to sell out the entire current inventory.

I've always know the term "turnover" to mean the rate that employees enter and leave the company.
