It has to be in response to a quote?

How about apply the quotation to your own life - how does it apply to you? Or provide an example from literature, history or current events which illustrates the idea in the quotation. Or compare/contrast two or more quotations with each other. Or write a fiction story which illustrates the ideas in the quotation. Or write a persuasive speech based on the quotation.

There are these great prompts called "Writing Bugs" on Education World which are printable and have the most clever ideas for getting students to write on different topics. The best part of all is that they are printable!

How about an essay that HAS to be grammatically correct and have correct spelling. I notice that most of the kids on here do not exhibit any knowledge of grammar or spelling and they have to be not learning this somewhere.
One teacher I had in high school made us observe an object and then write an essay describing it in a literary fashion.

I've had my students write an essay but I give them the first and the last sentence.
You could also have them write in different forms using different voices.
