Dope sheets specifically refer to the list of camera shots already taken or to be taken. The dope sheet is also a list of the contents of an exposed reel of film.

Also referred to as a double, the stand-in has the same physical characteristics and build as the lead performer. S/he will take the place of the lead while camera and lighting positions are being determined. The stand-in will also go through the motions of the performer during the composition of a scene. This relieves the lead performer from the tedium of ordinary production tasks.

Judder is an instability introduced when images sampled at one frame rate are converted to a different frame rate for viewing. This effect is most noticeable when frames are repeated or deleted in order to obtain slow motion or fast motion.

Overcranking is related to Judder; It is the process of speeding the frame rate of a camera up, so that when the captured pictures are played at the normal frame rate the action appears to be in slow motion. Historically, cameras were operated by turning a crank at a constant, required speed; hence "overcranking" refers to turning the crank too quickly.

As for "jump out", perhaps you mean jump CUT? That's a cut involving an interruption to the continuity of time, where the image in a shot closely matches the image of the previous shot.
