I'm an Attic Insulator and it is imperitive that you have proper ventilation. If you're putting on a new roof I would suggest putting on all new joists above the old ones and replace all of the roof boards then the shingles or metal or whatever you're putting on the roof. You need some space inbetween the insulation and your roof. Without proper ventilation you will only create more stress on the roof boards and the roofing material will not last as long.

Where ever there is a cavity, you need ventilation. Under floors, the space in walls and of course, the roof. Without ventilation you could get problems with moisture build up, which will attract mold. Also termites like warm, moist timber. Be safe, ventilate.

I think you want ventilation for many reasons. It will help maintain airflow in the attic to reduce moisture buildup. It will help heat buildup which could deteriorate your foam. You can do end gable vents or they could cut a couple of holes and put in a rotating vent. Or with a little work, they could put in a ridgeline vent. Roofers know what it takes to keep your roof from going to hell too fast.

Get the roofer back there to install some vents. You need 1 sq. ft. of vent for every 300 square feet of attic. The soffit vents are useless without venting located higher up the roof to allow the air to move. This won't change the temperature of the attic much, but it will prolong the life of your insulation and roof deck. (Most roofing material manufacturers require that their products only be installed on a properly vented roof structure.)

I have to go with the guy who is going to warranty the roof. If he says he needs ventilation for his product, and you don't YOU could void the warranty.
