Eight paragraphs is a good length. Start off the the beginning/introduction, then do the majority (6-7) paragraphs: why you like your dog, what he/she means to you, funny things he/she does, then end it with the conclusion or wrap-up.
I feel for you....I'm in the middle of writing my master's thesis!! Ugg.

That depends what grade you are in.
If you are grade school 3 paragraphs should be fine.
HS- 1-3 pages (start with one page and then add a bunch of details till you run out of ideas.)

write 3 paragraphs.
the first should include your introduction and basic info about your dog, the second should be all the important info, and the last should be your conclusion and anything you left of of the second paragraph.

first para -- intro. what u're gonna write abt n in a few short words, why.
next three paras [basically the body of ur essay] -- answer the 5 W'S and How. the whole process with getting ur dog, family reacting to it, getting used to him/her, how ur life changed, yadda yadda ya.
last para-- conclusion. summarize all of what u said.
