no, not everything follows a normal distribution. Think for example if you looked at the heights of NBA players, it would be negatively skewed and not normal. there are also distributions that have more than one mode. however, the distributions of standard error will always approach normalcy as you collect a very large sample. that is the law of large numbers.

No, not all sets of observations are normally distributed. Some are bi-modal or tri-modal or linear. An example of a non-normal distribution would be the number of births per pregnancy (usually one, sometimes two, rarely three, very rarely four or more).
