1. Lightly spray the concrete with water to give it some surface moisture.
Cover with sheets of plastic (5 to 10 mils thick.)
Then lay flattened cardboard boxes (refrigerator, large appliance, furniture kits, etc) over the plastic.
If an animal walks on the cardboard, the footsteps won't be embedded.
2. Keep a large dog chained nearby.

put a plastic erosion control barrier around it or plastic safety fencing. You can also watch it while it hardens. Concrete will cure very quickly during the day. Within a few hours (4-6) it should be safe for a small animal to walk across it and not make a mark. I know that sucks, but if you want to be sure...

Get a lawn chair, a book and you favorite beverage and guard it till it hardens. If the temperature is around 70 degrees 12 hours is adequate. If you are bored invite some friends over for a party. This method may produce shoe prints.

Using one of the methods that previous posters mentioned to protect the area is your best bet. It would be much easier than trying to keep these animals away. Raccoons, in particular, are destructive and very persistent. Any food source (garbage, pet food left outside, grubs in the lawn, fruit trees) will attract them.
