I want to tell everyone I meet to read "Monkeyluv" by Robert Sapolsky. It's a science book, BUT it's funny, accessible, and fascinating. Makes complex ideas easy to understand.
I don't agree with all of the author's personal views (he's an atheist), but the guy knows his science. He talks about nature vs. nurture, how we're all amateur biologists (if you're ever on a jury trying to decide if someone was murdered because the killer had an inherited condition that made him violent, or if you ever vote on whether or not to put more money into schools where the students are from poor families, you're using biology).
It was a book I had trouble putting down, and wanted to buy for everyone I know.

If you like Science Fiction, the Dragonriders of Pern is a good series. I forget the author, but I love the series. Also, V.C. Andrews wrote some interesting books. Most of the classics are good reads and not too dry.

All depends on what you like. I have read all of Nelson DeMille's books. VERY good reads! He's just the first to come to mind though. Thomas Harris, another good story teller.
