I think organizing data is when you clean and prepare the data (such as getting rid of typos/errors) prior to analyzing them (data are plural). Analyzing data is making calculations and making inferences based on the information provided.

Sometimes data comes in a unorganized manner. For example if you were gathering data on the linear equation x+y+z = A, but your data came in the following formats:
2x + 3z + 5y = 36
2y + 4z + x = 25
You would first need to organzie your data so that your x, y, zs were in the same place and then begin your analysis. For example you might want to see if changes in x are correlated to changes in y and if so how strong their relationship might be.
