In an interview in the Visual Companion book, Joss makes the point that to be "real", a character has to die. He contrasts "Serenity" with a war film from the 60's called "Zulu" (he drew some inspiration for the final battle scene from "Zulu") - all the main characters in "Zulu" survived. He wasn't going to do that in the movie.

He expands upon that idea in the commentary on the movie, indicating as well that he wanted to create the sense that anybody - if not everybody - could die in that battle. Only Jayne escapes without injury - but Zoe, Kaylee, Inara, and Simon all get hit, never mind River going out the blast doors to retrieve Simon's bag. If you haven't watched the movie without the commentary, you're missing a lot.

As to why Wash? - Alan Tudyk had talked with Joss back when Firefly was still being filmed, and Wash was going to be killed off sometime in the series, maybe during the second season. I don't remember the sources there.
Or, you could take the hint Joss put in the movie, and that there was "no good reason' (remember the scene on Miranda when Jayne is delivering a monologue with the camera panning and Jayne's last words go to the effect of " we are all going to die for no good reason", and as he says the last bit the camera pan stops on Wash.) That hint - as written and filmed - wasn't accidental, and "no good reason" is a perfectly fine reason for Joss to kill off Wash.
So:
(1) Read the interview with Joss in the VC.
(2) Watch the movie with commentary.

Great show, great movie, but Wash did not have to die. They did well with keeping of the Old West, admired that very much. but it's always Hollywood's way of interjecting cheap theatrics by having to off someone. unnecessarily. Book and that new guy wasn't enough? No point but a grieving Zowie at the end. Why was her absolute sadness necessary? You style sucks, and I'll never watch another series made by you again. Oh, and while I'm here...your bounty hunter story line was great. good, crazy, but serious actor, but mentioning rape as a part of the 'scary' part to control the female engineer was crass and tasteless...I would have stopped watching the series if you had shown that episode in the beginning. I know this is 5 years old...but now it's out there. Loved the show...hated the ending.

No Whedon show ever ends with everyone making it out alive.
Only two of the main characters died in Serenity; Book, then Wash. Who are you counting as the third?
And to the person whinging about spoilers? Pff! The movie's been out for over a year. See it already!

As has already been mentioned, it was to heighten the tension before the final fight scene so you were not convinced that any of the crew would make it out alive.
Joss Whedon has said that, should we be lucky enough to get a sequel, Wash & Book are likely to make appearances, even if it is only in flasback. Both the actors who played these characters are certainly up for recreating their roles.

It advanced the plot and kept the audience guessing what was about to happen. Also by killing off certain main characters it continues the fell that no one is safe that the entire movie is surrounded in.

as gutted as i was, sometimes a price has to be paid for the greater good. also it is easy to watch a film or series and know that everything is going to be alright at the end but when you kill main characters it builds the suspense so you don't know who will make it to the end P...

Unfortunately the cast had to be left with no Moral grounding character. The remaining cast are all flawed in some way or another.

He killed him because he had to make it plausible that one of the really majour characters could die, ie when the reavers are dragging river away near the end you are like oh no they're gonna tear her to shreds but thankfully she beats them all up, great movie.
