a mixture can be easily separated into its components. for example, i can easily separate the components of a salt-water mixture by either filtering the water, or making it evaporate until only the salts remain. or maybe, take a salad. you can take out, although with some difficulty, the components with your hand, or with any other methods.
however, no matter what you do, you can never disassemble a compound, no matter what method you use. the atoms of its components have changed and fused, and unless you can separate and rearrange atoms, compounds cannot be changed.
for compounds, the properties of the elements 'disappear' because they have changed entirely. for example, Na is a higly volatile chemical which can explode. however, its fusion with Cl causes it to remove its explosive property. it becomes harmless table salt, with no possibily of ever exploding. why? because its atomic structure has been quite changed. in addition, the Cl's position in realation to the Na helps in changing the two elements into something new.
the properties of the elements of a mixture remain because they are only physically mixed. thus, if you put cheese in a spaghetti, it will still taste cheesy, because the resulting change was only physical, and did not affect the atomic structure of the noodles.
