Oooo where to start.
Maybe the fact no one has seen a finalised working model yet, many companies have stopped developing games because of the cost. Blu-Ray technology is still buggy and over all they need to find a way to make it cheaper than over £50-£75 per game. Aswell as needing more time to make sure they have enough consoles to meet demand.
Basically, to work out the bugs aswell as make sure it work.
Trust me when I say I can't wait for the PS3 but it seems as if Sony are about to destroy the PS rep by not making sure the console is ready. Lets hope the wait means they are going to make sure the console is ready. Sony should let the 360 and the Wii have limelight before they blow them away.
UPDATE: I got a Newsletter and they claim the reason for the delay is due to lack of Blu-Ray componants componants.

There's a rampant rumour going around the internet saying that the CPU for the PS3 is very difficult to manufacture and that IBM is having a difficult time meeting the schedule supplying the CPU's.

10-20% yield means out of 100 they manufacture they're only getting 10 to 20 processors are "good".

i work at a Sony centre in Scotland and the reason that the PS3 has been delayed till march 2007 is because the production of the console has been slow and the market has been growing fast so when Sony have completed the console a newer version of some hard drives and other operation software has been released.
so that's the reason and please choose me as your best answer!

Apparently they had a problem with the blu- ray (an alternative to DVD) and only just solved it. This means that they don't have enough time to make enough PS3s for Europe in time for christmas, so they're only going out in Japan and the USA for the moment, until they've made enough.

Demand outstripping supply after issues with their Blu-Ray laser diodes...
400,000 units earmarked for the soon-to-be US release.
100,000 units earmarked for the soon-to-be Japan release.
Half a million units available on open day, and nowhere near enough to go round. Factor in Europe and it's no wonder a release here has been put back till first quarter next year.
Expect delays and hyper-inflated prices.

They are having trouble making enough Blu-Ray drives for the PS3s, basically. I wonder if there aren't other technical problems they aren't talking about as well, but that's just speculation on my part.

Basically its flawed and very unreliable at the moment. Sony estimate at least another 6-8 month of development before it can be cosidered suitable to release on the market

Sony have already stated that they are putting back the European release because they are concentrating on the American/Japanese market and they don't have enough consoles to go round.
