Either make your feedback private so that then people won't see what you have bought and sold or even better have two seperate accounts, one that you use to buy stuff, and another to sell stuff, that way especially if you are doing any kind of e-bay arbitrage you won't be sniffed out by savvy buyers or sellers.

You can't. The only time this happens is when the seller of an item choses to keep the buyer's identities private.

One of the key principles of eBay is that people are able to see what others are up to and so guage what sort of a buyer / seller that person is before entering into a deal with them.
