In laymans' terms(i.e. the most simple terms) The differential helps a vehicle get around a corner by (by way of gears) letting one wheel rotate more than the other, helping the vehicle turn better.

If you look at the path the wheels take when going around a corner, you'll see that the wheel on the outside has to go a bit further. If the wheels turned at the same speed, it would have to slip on the pavement a bit, wearing out the tires and making the car handle funny. A differential lets the wheels turn at different speeds, so as to prevent this problem.
