The act of switching the key to the "off" position cuts the electrical power to the ignition system, thereby stopping the spark required for combustion in a gasoline engine. A diesel engine is stopped by cutting off the fuel supply since there is no spark.

When you turn the key off, power is interrupted to the coil, which means no high voltage spark to the plugs. Also the fuel pump stop running, so no fuel. No spark + no fuel = engine stops.
