I'd remove the old plaster and lathe, get down to studs, insulate as needed as well. Going over lathe is possible but is a real pain.
I like to clean the studs of all nails redo electrical as needed. Then sheetrock.. Your finished job will look a lot better and you may have electrical circuits you can use .
It seems it's best to lay the sheet on it's side, do the bottom sheet then if necessary cut the top sheet. If you are hanging the ceiling get a sheetrock jack from the rental store, it'll make it one heck of a lot easier to hang the ceiling.

Hanging drywall is quite easy, look at it like hanging wallpaper or even as simple as cutting a picture to fit a frame. Measure area(twice!) then screw to the studs. When mudding, remember a larger mudding knife is better for making the seam smooth. Feel free to email me if you have any other questions!

did you mean.. how do you hang drywall? If so,you measure the piece so that it will land halfway on a stud,then you screw it to the studs,but I'd need more details to give you a better answer.You'll have to clean up the old studs(remove or bang in nails etc...)and cut your pieces so that they land half on a stud.How many sheets do you need to hang?

Bring a chair over near the wall. Gather all the necessary tools and then set down and think in a relaxed mod for about an hour.

do the ceiling first, then the walls, use factory edges together whenever possible and screw it up rather than nails, Tape and bed it, then skim the joints, sand joints and paint. 3/4 inch rock all around.

I have never had much luck hanging drywall...
I can never tell where it's neck is to fit the noose onto.
