I would stick with the 100GB SATA drive with 7200RPM. The RPM is exactly that, Revolutions Per Minute...the faster the drive spins, the faster data can be read. The 100GB drive is the best deal I believe...unless you want to go with the 80GB and save $48...it's up to you.

go for 100GB 7200RPM SATA Hard Drive since it is already included in the price. rpm means revolution per minute.
1GB RAM is very sufficient for any applications. You can add more RAM next time u neccessary, as it will get cheaper as time goes, and also easiler. If you want to upgrade HDD, then you need to copy all the data.

Since it looks like cost is an issue, I would go for the 100gb drive & get 2gb of memory.
Graphics can take a lot of space, relatively speaking. But trust me it is FAR cheaper and easier to simply move your older images to DVD or purchase an external hard drive to store them on then to buy more memory.
With only 1gb of memory, if you start working on fancy photoshop images, especially if you have your email & web browser open, and a chat client, and your virus software running, you will notice your computer taking quite a bit longer to do things than if you had 2gb of memory.
For graphics machines, if $$ is the issue, invest in RAM & a DVD burner.

As a PC tech, I myself would go with the 100GB Serial ATA hard drive included in price. It is large, and fast, you will notice a HUGE performence compairing the 5400 to the 7200 rpm. I would never go lower than it. Personially I would call and ask if they had a 10,000 rpm hard drive because they do make them in the Serial-ATA form. The faster the rpm's go the faster windows boots and programs launch.

The faster the RPM, the faster the hard drive is, but if this hard drive is for a laptop then you should also consider the fact that faster the hard drive spins, the more battery power it will drain.
