can anyone plzzzz describe the chemical principles invovled in the action of these two cleaners?(how they work but the chemical interactions)

these cleaners contain things like bleach and ammonia along with alcohols and perfumes

they typically do several different things

-they disinfect by killing microbes
-they clean by solubilizing dirt and grime
-they dont leave spots because of slow surface tension
-they leave things smelling nice by removing bad things and leaving perfumey things behind

i think it is ammonia. But I can't describe the chemical interactions. I'm never much help...sorry.
