The word error has different meanings in different domains. The concrete meaning of the Latin word error means "wandering" or "straying", although the metaphorical meaning "mistake, misapprehension" is actually more common. To the contrary of an illusion, an error or a mistake can be dispelled through knowledge (knowing that one is looking at a mirage and not at real water doesn't make the mirage disappear). In a similar manner, ideology can't be dispelled by simple knowledge of its existence, but only, marxists argue, by a shift in perspective.

A mistake might be one of the following:

An error.
In criminal law mistake of fact and mistake of law are possible defences,
In contract law a mistake is an excuse for non-performance of a contract.

ERROR suggests the existence of a standard or guide and a straying from the right course through failure to make effective use of this. So basically error is a deviation from a standard level of expected result.

MISTAKE implies misconception or inadvertence and usually expresses less criticism than error .

Mistake indicates having knowledge of expected result, but deviation because of oversight

Same meaning, but different tone. If you say "I made an error" it does not sound like an apology - it's more of a neutral statement that you were incorrect (for example, typographical error). If you say "I made a mistake" it sounds more apologetic and more sincere, it suggests you may be acknowledging poor judgment. I don't know why the tone is different - maybe because "error" is Latin-derived and therefore sounds both more clinical (thus good for situations where you do not want to apologize) and more pompous (thus bad for situations where you want to sincerely apologize?)

Errors are in principle deliberate. To call something a mistake normally implies that it was accidental, i.e. not intended. We talk of "deliberate mistakes" but if you think about it this term relates to intentions in an accidental situation. Similarly "unintentional errors", which also uses the richness of English to create a nuance.

Errors are measurable and systematically reduces, while most mistakes are random and unavoidable. Mistakes are attributed to either lack of attention and incompetence of a person. Errors can occur due to, like, old machinery, damaged measuring instrument, effect of temperature, humidity and contamination. See more in Meterology (science of measurement).
