They didn't have their pictures taken at all, because in the early centuries, photography had not yet been invented. In the middle ages and the years since then, some men did have their portraits painted with their hands in their coats, because it was thought to be a noble pose.

Possibly because early photography required long film exposure times. The hands may have been in the pockets to minimize movement and discomfort. In many cases, metal supports were provided for resting the back of the head, to minimize movement. If not, certain parts of the shot would have multiple exposures (appear fuzzy).
