I know that I can go to explorer/tools/ and clear my history that way. But does that completely erase all trails? Is there another way that someone could still find my internet history? Don't worry, not doing anything illegal, but I'd rather not have nosy people poking through my business.

You are right.
From internet explorer tools you can clear your history.

But notice the section
Temporary Internet Files above the History section in the internet Options wizard.
This will store some webpages (cache).
Make sure you delete those also

If you are behind proxy there is every possibility that admin can know what all you did in your explorer.
