looking for somewhere that is safe for children, good views, not too far from beach and local shops but in the countryside

Try Chez Nous - they have a lot of properties on their books for rental: all independently owned. They also can help with ferry discounts and so on . ..

Try the area around Grandville. The beach is fantastic and plenty in the area to do for children and adults.
