Because the Jewish spelling is difficult to pronounce, and because ethnic sounding names don't do well in polling. Lots of immigrants change their last names to sound 'American'. I for one am grateful that they would change their heritage given name just so I don't have to learn how to make Jewish sounds. Shalom!

And possibly cause it's good for polling that all the Jews know their Jews, and all the Gentiles are just kinda blind.

Vow, didn't know that! That's food for thinking...Guess, it's just because some stereotypes are still alive, even about Jews and even in the US. However, it is really puzzling
