You use a memory card to save your games. You save characters, levels. It all depends on the game.

I believe enough information have been given on the use of the card. But there are some other related Q & As, you might be interested in.
1. Can I play withought a card?
yes, you can. but it's not worth it. like everyone says, you will have to start from the beginning every time. and with average complete time for each game as high as 50 hours. you need to save your progess.
2. Do I need a new card for each game?
NO!!!!!!!!!!!!! you will be surprised how many people don't know this. They see a slot for memery card inside each game case, and they buy a $20 card for each game. when a 8 mega card can last you 10 games or more!
3. common pit falls while useing the card?
If there are 99 saving space for a game, don't use them all!
go easy on the card and rewrite over the first five! or ten! It should be quite enough.
4. what kind of card do I buy?
There is, of course, the sony official card. 8 mega and usually 20~25 dollers. then there is the generic card 16 mega 18~25 dollers. I personally would go with the generic card for twice the saving space. But know that there is a very small posiblity that it might not work with a certain game you have. I heard such thing happen, once.
if you just got your childern a gaming systen. make sure they sit far from the TV, in a well-lit room, and rest their eyes 10 minutes for each hour of play.
enjoy.

As every one else said, you can save your games and restart them where you had left.
Another use of memory card is that when you play the team games like soccer, cricket, hockey, baseball etc, you can save the teams and their performance abilities.
You can also save the completed matches and can see the highlights of good performances you did during the games.
