Yes they have. I actually recall watching a movie made of "The Pit and the Pendulum" with the same name. I can't remember if it was like a tv movie or not, but it was made in the 1990's sometime. You can probably find more of what you are looking for at a Barnes and Noble. They usually carry things like that or can order it.
As far as his cause of death, a book that I have on Edgar Allan Poe states the following in the last days of his life that is known:
On September 27, 1849, Poe sails north to Baltimore, arriving on Sept. 28. His actions over the next few days are unclear, but according to reports, Poe may have visited friends, attended a birthday party, and ingested much liquor. On October 3, he is found delirious outside a Baltimore polling station. Friends take him to the Washington College Hospital (now Church Home and Hospital).
At the hospital on Oct. 7, Poe cries, "Lord, help my poor soul," and dies from "congestion of the brain." The exact cause of death has long remained a mystery and a matter of debate. Theories have ranged from foul play to excessive drinking to medical illness to the cooping theory: a theory that Poe had been drugged and dragged to polling places to be a voting "repeater."

Yes, works of Poe have been dramatised. I think the best known is the Raven with Vincent Price. I would also try looking on amazon.com or imdb.com to see if it is available.
As for how Poe died, I once heard at a lecture that he drunk himself to death. Don't know if that is true or not.

A recent feature length film by Czech filmmaker, Jan Svankmajer, titled "Lunacy," weaves together some Poe stories like The System of Dr. Tarr & Mr. Fether, and The Premature Burial, with the Marquis De Sade. It's pretty graphic and disturbing at times, but not to be missed! I highly recommend seeing it!

In the 2nd Simpsons Halloween special they did a rendition of "The Raven" with James Earl Jones(aka. Darth Vader) reading. It is the Simpsons, but that one piece of an episode is probably still one of the top 10 best simpsons moments.
