The answer depends on how involved you want to get. Adding a free flow air filter and performance exhaust help a bit and are relatively cheap. Same with upgrading the fuel management and ECU chip.
If you really want to go big you can add some kind of forced induction like a turbo or supercharger. Those would post some big gains but at a heavy price tag.

First, why would you want to? the VTX has plenty of horsepower for the type of bike that it is.

However.

The three biggest things that you can do are
Get a better exhaust (not a shorter one, or a louder one, a better one)
Put performance cams in the motor
Get a better ECU map so that the motor gets a richer mixture in the power band.
