Because the tires will hit the upper control arm, and it don't have the travel it did before because of this. Have Fun!

By lowering them you have altered the geometry of the steering system. The only real way to correct it is to raise the vehicle back to stock height. Otherwise it's something you will need to just get used to.

THe alignment of the drag link & outer tie rod is wrong.
It's nearly negative ackerman.
Get that geometry back to stock to regain the turning ability.

i would say the geometry is off you would have been better using a drop spindel and keeping the stock springs and shocks so the truck thinks it is at factory ride hight should show better results

Tire size affects the speed sensor and could cause a faster reading to the computer or a slower one. This could result in a costly speeding ticket. Take it to a tire dealer.
