I'm South Carolina born and raised, and there are oh so many.
SOUTHERN BBQ. Let me elaborate. Up North if you have BBQ, it's some guy named "Al" cooking burgers and hot dogs outside. Down South BBQ is pork or chicken slowly cooked over fire or by a smoking met hood and served with a sauce that is either mustard, vinegar or tomato/ketchup based. In some areas the pork is served in slabs others it's "pulled". And of course there's pork ribs.

My personal favorite is pulled pork with a mustard sauce over open flame.

Then of course there's Fried Chicken, Rice & Gravy [or mashed potatos] and biscuts.Country Fried Steak covered w/ milk gravy, Biscuts and "sawmill" gravy Pork Chops and NO applesauce, As a side, sweet potatos [NOT YAMS] covered in salt, pepper and butter. Hot cooked collards, Fried catfish, these are just a few examples.

Best part about southern cooking is family. And of course anything cooked by Mom, her lemon maraigue pie is still begged for at dad's reunions and my parents are divorced.

OH I HAD TO EDIT THIS...I FORGOT THE ONLY OFFICAL DRINK OF THE SOUTH [AT LEAST FOR THOSE OF US THAT DON'T "DRINK"] SWEET ICED TEA!!!!!

Oh by the way, I'm glad to see that Margert is "totally" from New York. Had she only been partially from New York, it'd of been really hard on her mother.

First, shrimp cocktail. Then, Fillet Mignon, baked potato & Steamed green beans slightly crisp with butter. Perfect way to make the filet: Preheat oven to 375 degrees. Sear the fillet medallions on both sides over high heat in fry pan. Then remove pan from range & insert into preheated oven until done. Duration depend on how well you want the steak done. Use an instant read meat thermometer frequently to arrive a desired doness. Dessert? C'mon, after a month away you shouldn't need any suggestions. xoxo
