It is about someone taking up for himself and his choice of career. His fiancee tried to get him to work at her father's company so that they could be settled. But that just wasn't him, and he wants her to love him for him, not who she wants him to be.

It means taking a job for something you don't really believe in. You are "selling out" because you are trading your values for money. The "establishment" is big business, corproate business.
