When this happens the car will not start unless I wait 5 minutes and try again. The times that it does start, the 'run on' thing does not happen. Today it died while I was driving. After 5 minutes it started and I continued on my way.

I KNOW I need to take it in, but I'd like to have an idea of what's wrong so I can decide... corner garage or dealership.

It really helps if you also include the make model and year of the car in question, but here is my thought. Sounds likes your timing is off or you have a leaky fuel injector. Either way a garage or the dealership should be able to diagnose the problem.

Not knowing the type or age of the car I can only suggest the first thing that crosses my mind as general info. Sound like maybe two problems. The car quits after it warms up could be the pick up coil. The starter sticks because of a sticking starter solenoid valve or starter relay.

You have two problems going on at same time. The starter is getting stuck on the flywheel, that's why it continues to turn over (most likely). Try shims on the starter bolt. The other problem requires more information, like year, make model, etc.
