The Houston Oilers (who moved to Tennessee and changed the name to the Tennessee Titans). I think the Broncos and the Dolphins were the original names of the teams, although a few other contest entries were considered for Miami before the name Dolphins won.

Oilers-all the oil Texas is known for
Broncos-the bucking, wild horses around Colorado
Dolphins-they are supposed to be the fastest and smartest ocean creatures.

Denver Broncos--Reference to cowboys, who were prevalent in the area in the day
Miami Dolphins--There's a lot of dolphins off the coast of Florida
