You should consider Johnson and Wales University in Providence RI. It has a world famous school of culinary arts/education.

I did a teacher training course in Food and Textiles Technology at Manchester Metropolitan University which has an excellent reputation and provided good quality training. However, before you get all excited, do some research. Food teaching is not like it was when I was at school (many years ago, granted!). The emphasis is now on methods of production, not cookery as such. Students are expected to have knowledge of factory production, bio hazards, storage of ingredients etc. it's not about making good quality, healthy food any more - that's why I gave up the job. I felt we were churning out factory fodder (or McD's workers!), not producing a generation of children who can prepare a healthy meal for themselves. Have a look round at the courses in your area and see what you think of the curriculum. Good luck with your ambition!
