What purpose [if any] does the steadily increasing amount of hair in my ears and, especially, in my nose serve... except to look gross, and to force me to shave elsewhere besides my chin and neck? Some older guys have so much untrimmed inner ear hair, it looks like their ears have small beards growing from them. Eeeeew!

It is nature's way of keeping your total hair count high even as the hair falls off the top of your head from that bald patch. The new ear and nose hairs make up the difference. It is a shame that you can not do a combover with them to cover the bald area.
