There isn't that much of a Dutch cuisine. Traditional Dutch food is a lot of mashed potatoes and cabbage and meat. Not really restaurant stuff.
If you're looking for a lunch place you might want to try Cafe Luxembourg on the Spui - it's a busy cafe where you can get Pea Soup (erwtensoep) with roggebrood (that's a heavy sort of bread). I think you could count that as pretty traditional.
As far as a dinner goes ... I would say that traditional Dutch would mean finding an "eetcafe" (cafe/restaurant) where the food will be pretty familiar. For me it's the atmosphere that's typical Dutch, and not really the food.

Amsterdam is the best city in the world!
I've have traveled widely and nowhere else have I felt so welcomed.
There are many fine restaurants but very few serving "Dutch" food.
When most Amsterdamers eat out they prefer somewhat exotic fare such as Thai or Brazilian.
The closest thing to traditional Dutch food you are likely to find are shops that serve Dutch pancakes. They are basically crepes with a choice of various toppings such as ham, cheese, jam, powdered sugar, etc.
Having said that, you might try the link below. But don't be surprised if the food is basic European Continental.

I am Dutch and hate saying this but the food in the Netherlands is not great, you are probably best to choose a restaurant away from the tourist areas if you want to experience real dutch cusine.
I should rephrase the begining, there is great food in Amsterdam but NOT Dutch food.

Not too touristy... that rules out the one place I know of.
Thing is, the Dutch aren't exactly known for their cuisine. It's usually just meat, vegetables & boiled potatoes with beef gravy. Sometimes we go crazy and mash the potatoes with our vegetables to create a 'stamppot'.
If you want to amaze yourself or your friends with the horrors of Dutch cooking, have some fries with mayonaise. Or order a 'kroket' with your fries - deep fried meat ragout in breadcrumbs. Or have a raw herring with chopped onion.
We gave the world Heineken and really, that's enough for any nation.

I'm living in Holland but I am not Dutch. I think there's actually no traditional or national Dutch cuisine here. The ''real Dutch'' things that they have here are stamppot (mushed potatoes, carrots and other ''mushable'' veggies), pannenkoeken (pancakes) and rookworst (sausages, to eat it with the stamppot).
Really, I wouldn't try those.
