Interesting = depends on you - i.e. anything you enjoy reading.
Meaningful = something you find meaning in i.e. it answers a question you have or helps you make better sense of the world or informs and educates you on a topic you are intereted in or has a lasting impact on you/ your mind/ your worldview.
good example of interesting and meaningful reading = Ayn Rand's books.

that depends entirely on the reader. I enjoy all kinds of different reading. The book I'm reading right now is; Eat, Love, Pray, by Elizabeth Gilbert. It is really a good book. Here is just one of the many reviews done on it:
"This is a wonderful book, brilliant and personal, rich in spiritual insight, filled with sorrow and a great sense of humor. Elizabeth Gilbert is everything you would love in a tour guide, of magical places she has traveled to both deep inside and across the oceans: she's wise, jaunty, human, ethereal, hilarious, heartbreatking, and God, does she play great attention to the things that really matter."
Next book I'm going to read is The I Chong, by Tommy Chong, Meditations from the Joint. It has to do with the 9 months he spent in prison for selling a bong online.
So, like I said it all depends on what you enjoy reading.

Anything that makes you happy. But if you want something really meaningful then try a Bible or a Koran.
